What is the purpose of using the HORL® Leather Strop?
The leather strop is designed to provide the ultimate professional finish after you finish sharpening. While the sharpening discs grind the edge, the finely pored surface of the vegetable-tanned leather removes microscopic metal particles (the burr) and grinding residue. This extra step smoothly refines the edge so your blade glides effortlessly through ingredients.
Do I need to apply a honing compound to the leather?
No, you do not need any honing compound or paste. The premium, finely pored cowhide is specially selected to work completely dry. It naturally catches and clears residual grinding dust without requiring any extra messy substances.
How exactly do I swipe the knife across the strop?
Always place the leather on a flat, stable surface. Hold the knife firmly at a slight angle (matching your 15° or 20° sharpening angle) and pull the blade across the leather with the spine leading first. Apply only light pressure, and alternate sides 5 to 10 times to ensure an evenly centered, razor-sharp edge. Never push the cutting edge forward, as it will cut into the leather.
How often should I use the Leather Strop?
Unlike a traditional honing steel which you might use every week, the leather strop is meant to be used immediately after a sharpening session. Once you finish using your HORL rolling sharpener, a few quick swipes on the strop will "lock in" that fresh, razor-sharp edge.
