What is the difference between this peel and the Ooni Turning Peel?
These are two different tools designed for different stages of the cook. This peel (UU-P0A400) is a 12-inch launching and retrieval peel — it is used to slide a raw dressed pizza onto the baking stone and to retrieve it once cooked. The Ooni Turning Peel (UU-P09400) has a smaller 7-inch perforated blade designed specifically for rotating a pizza mid-bake inside the oven to ensure even cooking across the base and crust. The two peels are complementary and are both recommended for the best results — the launching peel gets the pizza in and out, the turning peel manages it during the 60-second cook. This peel can be used for turning in the absence of a dedicated turning peel, but the smaller blade of the turning peel makes mid-bake rotation significantly easier at high temperatures.
Should I use flour or semolina on this peel before launching?
Yes — dusting the blade with a small amount of semolina flour or fine 00 flour before placing the dough on it is the most reliable way to prevent sticking. Semolina is preferred by many home pizza makers as the coarser texture acts as small ball bearings under the dough, allowing a cleaner slide onto the stone. Work quickly once the pizza is dressed — the longer a topped pizza sits on the peel, the more moisture transfers from the sauce into the dough, increasing the risk of sticking. If the pizza sticks mid-launch, gently lift the leading edge, add a little more semolina underneath, and try again before the stone loses heat.
Is this peel suitable for use with 16-inch Ooni ovens?
This peel has a 12-inch blade width, which is sized for 12-inch Ooni pizza ovens. It can be used to launch and retrieve 12-inch pizzas in a larger oven such as the Karu 2 Pro or Koda 2 Pro, but it is not wide enough to support a 16-inch pizza. For 16-inch ovens and larger pizzas, Ooni produces a 14-inch peel that fits comfortably through the larger oven opening and supports the full pizza surface. If you own both a 12-inch and a 16-inch oven, a 14-inch peel works well across both.
